Quinoa Tabbouleh

Ingredients

½ cup quinoa, uncooked
1 ½ cups water
2 large tomatoes, finely diced
5 spring onions, finely chopped
1 cup parsley, finely chopped
½ cup basil, finely chopped
¼ cup mint leaves, finely chopped
1 tablespoon flaxseed oil
¼ cup freshly squeezed lemon juice
Season with cracked pepper


Method

  1. Place quinoa and 1 ½ cups water in a medium saucepan and cook until water is absorbed and quinoa is soft and tender.
  2. Stir through remaining ingredients.
  3. Serve immediately
