Goji Beet Coconut Ice

goji beet coconut ice recipe

Coconut Layer:

3 cups shredded coconut

1/4 cup rice malt syrup

1 tbsp coconut milk

1 tbsp coconut oil

 

Pink Layer:

3 cups shredded coconut

1/4 cup rice malt syrup

1 tbsp coconut milk

1 tbsp coconut oil

2 tbsp Morlife Certified Organic Chia Seeds

1/3 cup Morlife Goji Berries

1 tsp Morlife Certified Organic Beetroot Powder

Place the ingredients for the coconut layer into a food processor and pulse until mixture sticks together. On a lined medium square tin, spread mixture out and place in the freezer.

Next move onto the pink layer, placing the ingredients for this layer into the food processor and pulse until mixture sticks together. Spread on top of the coconut layer and freeze.

Allow to freeze for at least 30 minutes before cutting into squares.

Top with additional Morlife Goji Berries to serve. Enjoy!
