The Digestion-Friendly Waffle Recipe Your Gut Will Love

Behold! We bring you waffles which are actually good for you and are accompanied with a delicious topping that contains the benefits of superfoods AND prebiotic fibres. Yerp, a health heaven does exist! This recipe is super easy to whip up, you can easily make each component the night before and keep it handy in the fridge for the next morning.

Before you get started on the waffles, make your topping first. Our deliciously creamy topping is very unique, not only does it contain the benefits of superfoods BUT prebiotic fibres thanks to our Morlife Certified Organic Inulin Powder! Inulin has been receiving a lot of hype lately, and for good reason.

Inulin is the most convenient solution to increase your prebiotic soluble fibre intake and it will contribute to healthy functioning bowels. Our Certified Organic Inulin is derived from Jerusalem artichoke making it 100% natural, it has a subtle sweet taste and can be added to pretty much anything!


We’ve also included our Morlife Organic Yacon Powder. Yacon is a tubular root found in South America, it has been consumed for centuries for its nutritional qualities and delicious taste (it has hints of maple and caramel!). It naturally contains the prebiotic fibre; fructooligosaccharides. Our topping really is getting better by the second!
Once you’ve drained the water from the cashews and dates, simply add them, along with your other ingredients in a blender and process until smooth and creamy. You can add more coconut milk if it’s too thick. Give it a little taste, if you want it to be sweeter add a dash of our Monk Fruit Juice Powder.

Onto the waffles! This waffle recipe is definitely not your typical waffles.These ones will nourish the body from the inside out thanks to its wholesome ingredients. For the flour base, we’ve used oats, your typical breakfast staple in a different form! Oatmeal contains an array of nutrients including fibre, which is important for healthy bowels and will help keep you fuller for longer! We’ve also added in a banana for some fruity goodness, vitamins and minerals and for that creamy taste! We found coconut milk tastes delicious in this recipe, giving the waffles that extra crispy outer layer but of course any milk will do. If you want them to be vegan, you can easily replace the eggs for flax or chia seed eggs. (Mix 2 tbsp of chia seeds with 6 tbsp water, it will gel and give you the equivalent of 2 eggs).

We’re proud to say that we have not added any refined sugar into our waffle mixture. We’ve sweetened them naturally with our Morlife Monk Fruit Juice Powder. Providing roughly 10 times the sweetness of regular sugar, you’ll only need a dash of this bad boy to get your waffles tasting sweet. Monk Fruit Powder has a history of being used in traditional Chinese medicine for centuries. It’s both vegan and gluten free with a subtle caramel undertone- yum!

Once you’ve blended your waffle ingredients altogether, place 1/3 of a cup on your waffle maker and let them cook and crisp up! Most waffles usually have a timer so you won’t have to worry too much about them getting burnt, but it’s good to keep an eye on them.

Serve you waffles with toasted pecans preferably (though fresh will also be just fine) and of course your delicious Creamy Caramel Prebiotic Topping! 

REFINED SUGAR-FREE WAFFLES WITH CREAMY CARAMEL PREBIOTIC TOPPING

PREP & MAKE TIME: 40 mins (including soak time)

SERVES: 1-2

INGREDIENTS

WAFFLE MIX

2 cups oat flour
2 eggs
1 cup coconut milk
1 ripe banana
½ tsp Morlife Monk Fruit Juice Powder

TOPPING 

½ cup cashews, soaked for 20 mins in hot water
3 medjool dates, soaked for 20 mins in hot water
1 heaped tsp. Morlife Cert. Org. Inulin Powder
1 tbsp. Morlife Organic Yacon Powder
2-3 tbsp water
Handful roughly chopped pecans (to serve)

 

STEP BY STEP

  1. Drain both the cashews and dates and place into a blender.
  2. Place remaining topping ingredients (aside from pecans) into the blender and process until smooth and creamy. If mixture is too thick, add a little more water. Pour mix into a jug and set aside.
  3. Preheat a waffle iron with cooking spray.
  4. Using the same blender, place in the waffle ingredients and blend until smooth.
  5. Pour 1/3 cup of the batter onto the waffle iron.
  6. Cook according to the waffle instructions or settings. The waffle should be brown and crispy.
  7. Serve with the Creamy Caramel Prebiotic Topping and pecans.
