
Chia and Goji Breakfast Pudding

Ingredients
2 tablespoons Morlife Chia Seeds
1 tablespoon Morlife Goji berries or Dried Blueberries
1/3 cup raw almonds & cashews
2 dried figs
1 tablespoon Coconut oil
1 cup soy/rice/nut milk
Sprinkle of cinnamon
½ teaspoon vanilla extract
Method
- Place figs, almonds, cashews, coconut oil and milk in a food processer/blender and pulse until a smooth consistency is reached.
- Pour mixture over chia seeds and stir thoroughly.
- Top with dried blueberries/goji berries, cinnamon & vanilla, stir to combine.
- Allow to sit for 10 minutes so chia seeds swell and mixture forms a pudding texture, add a small amount of water if necessary.
- Optional: Sprinkle with fresh blueberries when serving.
