
Delightful Fruit & Nut Balls

Ingredients
6 dried figs
6 dried apricots
¼ cup goji berries
¼ cup raw almonds
¼ cup raw cashews
¼ cup tahini
1 tablespoon ground LSA (Linseeds, Sunflower seeds, Almonds)
1 tablespoon ground Almonds
1 tablespoon coconut
1 teaspoon cinnamon
½ teaspoon nutmeg
1 tablespoon Agave nectar
Extra: sesame seeds & coconut for rolling
Method
- Place figs, apricots, goji berries, almonds and cashews in a food processor and pulse until well chopped and combined.
- In a mixing bowl stir together the chopped fruit and nuts, tahini, LSA, ground almonds, coconut, spices and agave nectar.
- Mix together until mixture is sticky and well combined. Add extra agave nectar is mixture is not sticking together or if you want a sweeter taste.
- Take a spoonful of mixture and roll into balls.
- Roll the formed balls over sesame or coconut until nicely coated.
- Repeat this process until all the mixture is gone.
- Refrigerate after making.
- Makes approximately 12 balls.
TIP
