Chia Ginger Cookies

Ingredients

1 1/3 cups wholemeal plain flour, sifted
½ cup Morlife Chia Seeds
2 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
½ teaspoon salt
¼ cup coconut oil/grapeseed oil
½ cup brown sugar
1 egg
1/3 cup molasses

Method

  1. Preheat oven to 170°C
  2. Mix together flour, Morlife Chia Seeds, spices and salt
  3. Beat together sugar and egg until all sugar is dissolved
  4. Add coconut oil and molasses to egg mix and stir until well combined. (If coconut oil is hard, gently heat to make liquid).
  5. Stir wet ingredients into dry ingredients.
  6. Knead dough and form a large ball.
  7. Wrap or cover the dough and refrigerate for approximately an hour
  8. Measure on tablespoon of chilled dough, roll and flatten
  9. Place on greased baking tray
  10. Repeat process until all dough is used up
  11. Bake for 10 – 11 minutes
  12. Remove from oven and allow to cool on a wire rack
