
Chia Ginger Cookies

Ingredients
1 1/3 cups wholemeal plain flour, sifted
½ cup Morlife Chia Seeds
2 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
½ teaspoon salt
¼ cup coconut oil/grapeseed oil
½ cup brown sugar
1 egg
1/3 cup molasses
Method
- Preheat oven to 170°C
- Mix together flour, Morlife Chia Seeds, spices and salt
- Beat together sugar and egg until all sugar is dissolved
- Add coconut oil and molasses to egg mix and stir until well combined. (If coconut oil is hard, gently heat to make liquid).
- Stir wet ingredients into dry ingredients.
- Knead dough and form a large ball.
- Wrap or cover the dough and refrigerate for approximately an hour
- Measure on tablespoon of chilled dough, roll and flatten
- Place on greased baking tray
- Repeat process until all dough is used up
- Bake for 10 – 11 minutes
- Remove from oven and allow to cool on a wire rack
