Chia, Macadamia and Lemon Crusted Salmon

Serves 2

Ingredients

1 cup lightly toasted Macadamias
2 teaspoons Morlife Chia Seeds
1 handful of Fresh Dill
1 lemon Zested and Juiced
Salt & Pepper to season
2 medium size steaks (salmon, swordfish, trout, cod)

Method

  1. Place all the ingredients in the blender except the lemon juice and blend until breadcrumb consistency.
  2. Lightly coat both sides of the fish steaks in lemon juice.
  3. Coat the fish steaks in the blended mixture.
  4. Cook fish steaks on a grill pan set to a medium heat.
  5. Cook both sides for 3-6 minutes, depending on how you want your fish steaks cooked.
  6. Serve with a green salad or steamed vegetables.


This dish is so delicious it’s hard to believe it’s so good for you. The crust adds a lovely crunching flavour to any fish, it works best with Salmon, Barramundi, Sword Fish and Trout. The salmon and chia seeds provide a great source of Omega 3 essential fatty acids and the macadamia’s contribute to ‘good’ fat, known as monounsaturated fat.

TIP
Chia seeds are heat stable and do not lose their antioxidant benefits after heating so they are great to use in cooking. Add to stir fries, rubs for grilling meats, baking and more.
